Yen Can Cook: Shrimp Sauce Pork Ribs (Philips Air Fryer Version)
Shrimp Sauce/ Shrimp Paste (虾酱), is made from fermented ground shrimp mixed with salt. Some versions are in its wet form and some are sun dried and cut into blocks. It is a common ingredient used in Southeast Asian and Southern Chinese cuisine. Shrimp paste has a pungent aroma and some might found it smell “fishy”, do you know that our Belacan is a type of shrimp paste too?
Normally this recipe is used for fried chicken but I found that it is suitable to fried pork ribs too. Let’s try it!
Ingredients
500g pork ribs
2 tablespoons shrimp sauce
1/2 tablespoon sugar
1/2 egg
Rice flour + corn starch, ration 2 :1
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Step 1: Put the pork ribs into a pot of water and bring to boil, to remove blood and impurities. Remove, drain and set aside.
Step 2: Marinate the pork ribs with shrimp sauce, sugar and egg for at least 2-3 hours.
Step 3: Coated evenly the marinated pork ribs with the mixture of rice flour and corn starch.
Step 4: Pre-heat air fryer at 180ºC. Lightly brush the grill with cooking oil. Place pork ribs and air fry pork ribs for 8 minutes on each side. Alternatively, deep fry pork ribs in heated oil for about 5 minutes or until golden brown.
Enticing enough to evoke your craving?
Happy Cooking!
