I cook: Arrowroot Pork Ribs Soup 粉葛排骨汤
Arrowroot (粉葛), some might misunderstanding it as “nga gu” which we commonly slice it to make chips when Chinese New Year.
Arrowroot (粉葛), is a type of root vegetable which is free from gluten, low in calories and high in protein, fiber, folates and Vitamin B-complex.
Ingredients
A medium size arrowroot (500 – 800g)
300g pork ribs
1 carrot
Some peanuts (optional)
Handful of red dates, wolfberries (goji) & yuk zhuk
Salt to taste
Step 1: Clean the arrowroot and carrot, peel the skin and cut into chunks. (You may keep the skin of the arrowroot because some said the skin have more nutrition but I’m not sure how true is it)
Step 2: Put the pork ribs into a pot of water and bring to boil, to remove blood and impurities. Remove, drain and set aside.
Step 3: In a soup pot, put everything (except woldberries & salt) in and bring to a boil. Reduce heat and simmer the soup over low heat for 2 – 3 hours.
Step 4: Add in woldberries and boil for another 5 minutes. Add salt to taste & serve.
I have seen this recipe somewhere. This soup has some nutritional value good for health. Will check it out. Thanks for sharing, bookmarked to cook.

You can prepare the soup without putting any meat and replace with cashew nuts 🙂

My mom always cook this, I like it especially the texture of Arrowroot.
If can get arrowroot with nice texture, some are really coarse & fibrous 😛
