I Cook: Hash Browns Crust Spinach & Mushroom Quiche

Adapted from Jenn’s winning recipe  for Simplot Best Food Blogger Cooking Competition.


 

Ingredients

1 packet hash brown/ popcorn hash brown

4 eggs

4-5 button mushrooms (Cut into thin slices and slightly pan fried)

2 sausages & 3 streaky bacon. (Cut into small pieces then slightly pan fried)

200 ml cream & 100 gm Mozzarella cheese

Salt & pepper to season

Step 1: Deep fried the hash brown to golden brown, drain and set aside.

Step 2: Blanch the spinach, drain and squeeze out all the water and cut the spinach into smaller pieces.

Step 3: Crush the hash browns and press them into a ramekin to make a hash browns shell. Preheat the oven and bake the hash brown shell with 180ºC for 10 minutes.

Step 4: In a big bowl, beat the 4 egg then add in cream, Mozzzellera cheese, salt & pepper. Mix well.

Step 5: Put the sausages, bacon, mushroom and spinach into the hash browns shell then pour in the egg mixture (step 4) till full. Bake in oven with 180ºC for 20 minutes.

Remove from the remekin and served.

Tips: Bacon, sausages and mushroom can be substituted with other ingredients such as salmon, chicken, corn or zucchini just to name a few.
