I cook: Mixed Vegetables Stew
This is a popular vegetarian dish to consume during Chinese New Year especially on 1st day and my mom will prepare a huge pot of mixed vegetable stew that sufficient to be consumed throughout the whole day. Normally I won’t stop at only eating one bowl 😛 My today’s recipe is a simple version with lesser ingredients, here you go!
500g cabbage or Chinese cabbage (大白菜), cut to small pieces
8 dried shiitake mushrooms, soaked and sliced
6 pieces wood ear fungus
30g cellophane/glass noodles (aka ‘tang hoon’ or 粉絲)
1 tbsp vegetable oil
5 slices ginger
4 cloves of garlic, peeled and finely chopped
3 cubes red fermented bean curd (aka ‘nam yee or 南乳)
Sugar and salt to taste
Step 1: Heat oil in a large wok, stir fry ginger and garlic till fragrant then add in the cabbage, shiitake mushroom and wood ear fungus.
Step 2: Add in water, red fermented bean curd then bring to boil, lower the heat and simmer for 10 minutes.
Step 3: Add in glass noodle and simmer for another 2 minutes. Top up the water if the gravy runs dry.
Step 4: Season with salt and sugar and ready to be dished out when the gravy is reduced.
Remark: Other ingredients that can be added into this mixed vegetables stew such as bean curd sheet ( (腐竹), dried lily buds (金针) & carrot.
