I cook: Vegetarian Stir Fried
This is a good recipe when you need to clear your refrigerator 🙂 Why I say so? Because you can throw in anything in your fridge to make this and the quantity of each ingredients is adjustable. This is my version of meatless stir fried for my Meatless Monday dinner, you can also add in any meat if you can’t live without it 😛
Ingredients
Cashew nuts
Potato
Corn kernels
Firm beancurd
French beans
Preserved radish (Choy poh)
Onion
Salt & pepper
1/2 tablespoon of rice ~wine
Cooking oil
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Step 1: Potato, firm beancurd, French beans, onion and preserved radish cut into small cubes.
Step 2: Heat oil in a frying pan, fried the cashew nuts, potato cubes, firm beancurd cubes till golden brown. Remove from pan, drain oil and set aside.
Step 3: In the same pan, fried the onion till soft then add in preserved radish and French beans cook for 2 minutes. Add in ingredients of Step 2 and corn kernels, stir fried for another 2 minutes. Add salt and pepper to taste and lastly sprinkled the rice wine for an aromatic finish.
Step 4: Serve with rice.
