Sinalau Bakas @ Sabah
We drove back to Kota Kinabalu after our Desa Dairy Farm visit and I kept an eye out for the Sinalau Bakas stalls which operating by the roadside.
Sinalau means ‘smoke’ and Bakas means ‘wild boar’, so you got Sinalau Bakas which means BBQ wild boar meat. It’s a traditional food for Kadazandusun people, the largest ethnic group in North Borneo.
We spotted a few Sinalau Bakas stalls along the road, the famous stretch of Sinalau Bakas stalls near KK lies along the trunk road to Kundasang from Tamparuli near the Kota Belud bypass. The opening day and hour of the stalls are irregular as it depends hunting. Most of these stalls feature a simple setup with zinc roofed shack functions as kitchen and dine in area.
Sinalau Bakas is made from freshly-hunted bearded pig, a type of wild boar known from Borneo’s rainforest regions.
Huge chunks of meat was placed on a rack with a pile of burning wood underneath.
Those meats were left to smoke on the grill while awaiting customer orders.
When order received, the smoked meat was transferred to direct heat to be barbecued until fully cooked.
Definitely not the most pleasant looking piece of meat but the flavors were totally the opposite!
The grilled pork was well seasoned, not overpowering with enticing smoky aroma. The texture was tender and slightly chewy resembles lamp chop.
Dipped the meat with the accompanied special chili sauce for that extra kick!
There were other traditional native food offered in the stalls too such as the fermented rice and meat in jar.
Raw wild boar meat and smoked wild boar meat are available for sale.
Verdict: Recommended! Have a taste of this exotic smoked wild boar meat if you happen to pass by the area.
Though I’ve not eaten freshly grilled wild boar like that before, I’ve had wild boar curry many times. But now that you’ve shown me its head, I’m not so sure anymore….omg, I can see its eyes still looking at us! O_O
Opps…. seem like i shouldn’t post that photo up =.=”
