Thomas K Hardy Wine Pairing Dinner @ Urban, Istana Hotel KL
Being one of my favourite restaurant, Urban nestled in Istana Hotel Kuala Lumpur leaded by Chef Sharusmizal never fail to impress me with his marvelous creation. After the splendid wine pairing dinner last year I got chance to attend the same event again this year, thanks to Hotel Istana for the invitation.

The table setting.
We started off with some Urban’s delicious breads and their signature butters.
Amuse-bouche
Featured a platter of egg custard, Profteroles and creme brulee.
Filled in an egg shell, the custard with lobster and sea urchin was bursting with flavors from the ocean, every spoonful left a very strong aroma of the seafood behind. Also jazzed up the dish was the miso scented with spicy togarashi pepper emulsion.
Digging into the creme brulee and discovered the luscious goose liver sitting within, just the right portion gave the creme brulee a appropriate richness and creaminess.
The dainty Profteroles with wild smokey salmon mousse was light and equally tantalizing.
First
Arrived in an aesthetically-pleasant manner, I took quite a good few minutes admiring the dish & almost didn’t want to destroy the food arrangement.
“FRESH” is the prefect word to describe the “Kumamoto” oyster! Slurping down it with gusto and feel the briny explosion in your mouth! The Chinese lychee infused Japanese horseradish sorbet and the pineapple cappaccio acted as the palate refresher so does the sourness from the capers berry. While the aloe vera jellies, petit salad & lime virgin rapeseed oil dressing prettied up the whole dish
Paired with 2009 Thomas K Hardy ‘IMPRIMATUR’ Chardonnay
The wine has a delightful lingering finish with citrus like crispness.
Second
The baked feuilette (flaky pastry) with a filling of truffle duxelles, mizuna lettuce and the sumptuous piece of Labeyrie foie gras placed elegantly in the middle. Crowned with morel mushroom and dressed with garlic froth & rich port jus, I enjoyed the different momentum and flavors brought out by the precious ingredients, so harmonically to the palate.
Paired with 2008 Thomas Hardy ‘FAMILY TRADITION’ Cabernet Sauvignon
The wine’s palate has generous mouth-filling of blackberry and cassis fruit with earthy Cabernet overtones, well- balanced tannins and a long finish.
Mojito Sorbet
Third
Mullawarra Lamb ‘Parmentier’ is a simpler version of Shepherd’s Pie with pulled mutton sandwiched between the mashed potato. The taste of the pulled mutton was delicate with subtle gamey taste while the spicy merguez had a firm texture and redolent with herbs.
Paired with 2009 DIZZY 201 ‘VINTAGE RESERVE’ Shiraz Cabernet
Fourth
The Mandagery Creek Australian Farmed Venison loin was prepared by using Sous-vide cooking method till medium-rare which is the best “doneness” to retain the meat’s juiciness and tenderness. Served aside was the braised 1824 grain fed cheek ravioli, beetroot, celeriac, glazed apricot, carrot dot, cocoa crumb, jumbo asparagus verte and shiraz bing cherry reduction.

Cheese from here and there served with pineapple saffron clove jam and muesli granola.

Sixth
Made by the finest Valrhona chocolate and infused with Grand Marnier, an orange-flavored brandy liqueur; the tart had a distinctive bitter-sweet taste and subtle citrus tang lingering in my mouth. Topped with a scoop of hazelnut milk ice-cream which I enjoyed immensely if compare with the former 😛 The caramelized banana, orange tuile and caramel had balanced out the richness of the chocolate tart.
Paired with Geoff Hardy ‘FULL FRONT’ Liqueur Frontignac
The fruity flavor of it is perfect to pair with the dessert above.

The Baked Labeyrie Foie Gras Feuillette was so AWESOME!! So was the Oyster course and Amuse Bouche… Urban is always so creative in their dishes!!
