Yen Can Cook ~ Udon in Tomato Pork Slices Soup

Tomato noodle soup is my ultimate comfort food and it always one of the choices whenever I want to be lazy. There are many versions of tomato soup noodles if you try to search online and THIS one that I’ve posted earlier is one of my favourite. 


Today I’m going to share with you another version of tomato noodle soup which is thicker and more creamy with canned tomato puree is added.

 

Ingredients (Serve: 3-4)

3 packets udon

3-4 tomatoes, diced

400g sliced pork/beef

5 tablespoons tomato paste

1/2 yellow onion, sliced

4 cloves garlic, minced

1/2 thumb-sized ginger, sliced

1.5 teaspoons sugar

1000ml stock/water

Cooking oil

Salt to taste

Spring onion, chopped (for garnishing)

Step 1: Bring a pot of water to a boil and cook the noodles. Drain and divide them into 3-4 bowls.

Step 2: Heat oil in a large skillet/pot, add sliced yellow onion and stir fry till slightly soften. Add in minced garlic and ginger, saute until fragrant. Add diced tomato and cook until it almost becomes a puree, about 3 to 5 minutes.

Step 3: Stir in the canned tomato puree. Pour in the broth and bring to a boil over high heat. Add in sliced pork and cook until fully cooked.

Step 4: Add sugar and salt to taste. Scoop broth over the udon bowls and sprinkle with chopped spring onion. Serve.
