Yen Can Cook: Asparagus & Shrimps Stir Fry

Fresh, green asparagus is a well-loved vegetable, delectably crisp and sweet. Asparagus is amazingly versatile which can be included in a variety of delicious dishes and can be steamed, simmered, roasted, battered, grilled, sautéed or wok-fried. Asparagus is often used in Asian cooking, either in salads or in stir-fries. It needs only a minute or so in a hot wok to retained its crunchiness.


How to choose asparagus?

Asparagus comes in several sizes, ranging in diameter but size isn’t an indicator of quality or flavor; thick asparagus is just more mature than the thin variety. Instead, look for bright green or violet-tinged spears with firm (not limp) stems. Make sure the tips are closed and compact.

 

Ingredients (serve: 3-4)

450g shrimps, peeled and deveined

450g asparagus, trim the bottom tough part and cut into roughly 8cm length

Half carrot, sliced or julliened

3 cloves garlic, minced

1 tablespoon soy sauce

Cooking oil

Salt to taste

Marinade for shrimps

1 teaspoon of salt

1.5 teaspoon of cooking wine

Step 1: Marinade the shrimps with the marinade for 20 minutes.

Step 2: In a frying pan, heat the cooking oil over medium-high heat.

Step 3: Add shrimps to the pan, cook until the shrimps are 80% cooked. Remove the shrimps from the pan and set aside.

Step 4: In the same pan, add a bit more oil and add minced garlic, saute till fragrant. 

Step 5: Add in asparagus and carrot, stir frequently and cook until the asparagus is tender-crisp. You may add in water and simmer a little bit with lid on if the asparagus you got are thinker size.

Step 6: Return the shrimps  (Step 3) to the pan, then add soy sauce. Stir until the ingredients are well combined. Add salt to taste.

Step 7: Serve.
