Yen Can Cook ~ Beetroot & Corn Soup
I like to “experiment” all sort of combination of vegetables and fruits for my soup, so you may find some “unusual” (or should I say exotic? not really though :P) ingredients such as starfruit, yacon, lentils and barleys in my soup recipes. Those recipes are not originally created by me, some I referred to cookbooks and some were online recipes. Today’s recipe is one of the latter, which I saw in a FB cooking group, calls for a few easy obtained vegetables like beetroot and corn, as well as dried fig.
Ingredients (Serve: 3-4)
1-2 beetroots (about 350-400g), peeled and cut into small chunks
1 ear of corn, shucked and cut into chunks
500g pork ribs
6-7 dried figs
2500ml water
Salt to taste

Step 1: Put the pork ribs into a pot of water and bring to boil, to remove blood and impurities. Remove, drain and set aside.
Step 2: Put all the ingredients (except salt) into a pot and add in water until enough to immerse all the ingredients. Bring to boil and lower the heat and let the soup simmer for 2-3 hours.
Step 3: Season with salt and serve.

This is very healthy for sure! I have not really tasted beetroot. I heard that it has an earthy taste.
PH, yes, beetroot has earthy taste but after boiled it, the taste disappears.
