Yen Can Cook: Black Beans & Pig Trotter Soup

Black beans are are prized for their rich source of protein, fibre, antioxidants, and minerals like folate, copper, magnesium, phosphorus and B Vitamins. The beans have a dense and mushroomy taste. Black beans are great food choice for vegetarians and vegan dishes as they are a good meat substitute. 

This Chinese black bean and peanut soup is a popular soup for Chinese ladies in confinement and it is also suitable for men and children as well. Pig trotter can be substituted with pork ribs or even chicken as per your preference.

 

Ingredients (Serve: 3-4)

1 pig trotter, 600g ± 

200g black beans

200g peanuts

Water

salt to taste

Step 1: Rinse black beans, drained, stir-fry in a preheated wok without oil over a low heat until fragrant.

Step 2: Soaked the black beans and peanuts for an hour, discard soaking water and drained.

Step 3: Clean the pig trotter, scrap off hair from skin. Boil a pot of water and scald the pig trotter to remove dirt and impurities.

Step 4: Combine all ingredients in a soup pot and bring to a rolling boil for 10 minutes. Then simmer on the lowest flame for about 2 hours or until the meat and beans are soft and tender.

Step 5: Season with salt to taste and serve.
