Yen Can Cook ~ Chives Pancakes

Already run out of ideas what to cook? With another two week of this quarantine to go, I’m going to share more quick recipes for you to try out in your kitchen during the Movement Control Order.

Childhood memories definitely one of the important source of inspirations to my meal planning. Nothing brings back childhood memories quite like a snack or meal that you ate when you were a kid. 

I grew up having this chives pancakes as snack which prepared by my mom. The ingredients needed are simple and the steps are super easy as well. I just prepared this as my lunch today, served together with Loh Hon Guo Dried Longan drink.

 

Ingredients (Serve: 2-3)

2-3 bunch of chives, clean and cut into 1cm long strips

30g dried shrimps, soaked in water and chopped

Cooking oil

Batter

150g multi-purpose flour

2 eggs

1/2 teaspoon salt

1/2 teaspoon white pepper

1/2 teaspoon cooking oil

150ml water

Step 1: Add all the ingredients of batter as well as the chives in a deep bowl and mix well, set aside for 30 minutes.

Step 2: Heat cooking oil in a pan and stir fry dried shrimps until fragrant. Add into the batter mixture (Step 1)

Step 3: Heat cooking oil in a pan (you mau use the same pan as above), pour the batter mixture into the pan and create an even round shape pancake, cook for about 3-4 minutes each side. Try not to move the pancake until it is set and flip to another side and continue cooking.

Step 4: Slide the pancake from the pan into the plate, continue the process until all the batter mixture is used.
