Yen Can Cook ~ Deep Fried Banana Fritters Balls (Cekodok Pisang)
Cekodok Pisang, also know as Jemput Jemput or Kuih Kodok is a type of Malay street fruit which is deep fried mashed banana fritters. It is usually eaten during breakfast or as a tea time snack,and it goes well with a cup of tea or coffee.
This recipe is great to use up your over-ripen banana. 😛
Ingredients (Serve: 3-4)
400-420g ripe banana, mashed
75g all-purpose flour
1 egg
1/2 tablespoon sugar
1 teaspoon baking powder
Cooking oil
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Step 1: Sift the flour and baking powder together in a mixing bowl. Add in the sugar, egg and mashed banana. Mix to form a smooth batter.
Step 2: Heat oil over medium to high heat in a saucepan. Put a spoonful of batter (Step 1) into the hot oil. Fry until golden brown. Remove fritters and drain on paper towels.
Note: Do this in batches so you don’t overcrowd the wok.
HAPPY COOKING!
So simple yet sinful, best with kopi!
KY, time to make some for this weekend’s tea time.
Ooo, I love these with coffee too but I’ll leave the frying to the makciks….hehe! 😉
Kris, actually I seldom buy fried food at outside now, if I did I’ll check their frying oil before decide whether want to buy. Some are terribly black >_<
