Yen Can Cook: Drogonfruit Smoothie Bowl

Today’s Yen Can Cook recipe, no cooking is involved! \(^o^)/

Well, smoothie bowls are one social media food trend we can really get behind. Why? Because smoothie bowls have some redeeming qualities. Whether packed with leafy greens, tropical fruit, or creamy avocado, these super-bowls are filling, nutrient-packed, and absolutely delicious.  They are also the rage on Instagram. I mean, they were basically designed for the perfect flat lay shot. Complete with crazy colors, endless toppings, and a touch of true artistry, it’s so pretty that you can’t resist snapping countless of pictures! Best of all? You only need a blender and five minutes to whip up a bowl of nutrient-dense deliciousness.

You can create pretty much any combo of flavors that you want and then top it with your favorite fruits and other crunchy things like cereal and nuts, the ingredient possibilities are endless. Here’s mine creation with very simple ingredients and the dragonfruit is the base of the smoothie bowl.

Dragon fruit, also called pitaya, is a tropical fruit with flesh inside is either white or a vibrant magenta. It is full of fiber and bursting with nutrients that has been found to boost immunity, prevent cancer, and slow aging.

Ingredients (Serve:1)

1 dragonfruit, skin peeled

1 banana, skin peeled

4 strawberries, stem removed.

150ml milk

Optional topping

Granola

Avocado

Fresh berries

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Step 1: Cut dragon fruit and banana into small sized cubes, together with the strawberries freeze them solidly.
Step 2: Add frozen fruit and milk to a blender or food processor, and blend until the fruit is in  a soft serve consistency. If the mixture has more of a liquid consistency, add more fruit.
Step 3: Fill bowl with dragon fruit smoothie, and top with the toppings.
Step 4: Serve.
A breakfast that’s an amazing superfood shade of hot pink!
HAPPY COOKING!
