Yen Can Cook ~ Egg Fried Rice with Prawns

I think everyone likes fried rice, raise your hand if you don’t. 🙋🏼‍

Fried Rice is my favorite way to use leftover rice. Pretty much anything can go into fried rice, usually a combination of veggies, beaten egg, and a protein such as the shrimp I’m using in this recipe, or pork, chicken, bacon or waxed sausage. It’s quick and easy to make, customizable with any of your favorite add-ins or any ingredients you have in the fridge (kind of clear fridge recipe), and so irresistibly delicious.

The way I cook fried rice is slightly different with the usual recipe that all of you used to know. I will add in all the seasonings to the rice and mix well before stir frying as I found this method enable the flavours coat easily and evenly on each rice grain. Do try out!

 

Ingredients (serve: 3-4)

4 cups leftover rice, grains separated well. Can substitute with freshly cooked rice if you don’t have any leftover rice.

200g prawns, shelled and deveined. Marinated with salt and pepper, 1/2 teaspoon each.

1 carrot, diced

Handful of French beans/long beans, diced

2 eggs, beaten

1.5 tablespoon soy sauce

1 teaspoon sesame oil

1/2 teaspoon kosher salt

1 teaspoon pepper

3 tablespoons cooking oil

Spring onion, chopped (for garnishing)

Step 1: In a bowl, mix the soy sauce, sesame oil, salt and pepper. Pour into the leftover rice, coat evenly every rice grain and set aside.

Step 2: Heat up the wok/deep pan, add in one tablespoon of the cooking oil and sear the prawns on both sides until 80% cooked. Dish up and set aside.

Step 3:  In the same wok, add the beaten egg and stir quickly to scramble it. Dish up and set aside.

Step 4: Heat the wok with high heat and swirl in two tablespoon of oil. Add the diced carrot and French beans, sauté for 2-3 minutes till slightly soften.

Step 5: Then add the seasoned rice (Step 1) to the wok, stir to mix well with the vegetables. Spread the rice mixture over the surface of the wok and let it fry, without moving it. You should hear the rice sizzle. Cook for about 1 to 2 minutes. Stir and let cook for a minute longer.

Step 6: Add prawns (Step 2) and eggs (Step 3) into the rice mixture, stir to combine. You may add more seasoning to taste on this step.

Step 7: Serve and garnish with chopped spring onions.
