Yen Can Cook ~ Green Papaya Peanut Soup
Although green papaya is known for increasing milk supply for breastfeeding mothers. But this soup can also be consumed by all as it improves the function of our digestive system and consequently boost our skin vitality.
Ingredients (Serve: 3-4)
1 small green papaya (about 500-700g), peeled, seeds removed and cut into big chunks
500g pork ribs
80g peanuts, washed and soaked for 2 hours
2 dry candied dates
Salt to taste
To blanch the pork ribs
1 tablespoon of cooking wine
A few slices of ginger
Step 1: Bring a pot of water to boil, add in a few ginger slices and 1 tablespoon of cooking wine, blanch the pork ribs to remove blood and impurities. Remove, drain and set aside.
Step 2: Put green papaya, peanut, pork ribs and honey dates into a pot and add in water until enough to immerse all the ingredients. Bring to boil and lower the heat and let the soup simmer for 2-3 hours.
Step 3: Season with salt and serve.
