Yen Can Cook ~ Matcha Pound Cake

Why pound cake is called pound cake? It is traditionally made with an equal weights (one pound each) of flour, butter, eggs, and sugar. Pound cake is served either dusted with powdered sugar, lightly glazed, or with a coat of icing. Texture wise, pound cake is a dense cake with a sturdy crumb structure. Adding mix-ins, interesting flavorings, and delicious glazes and drizzles to create numerous of variations which turn a basic snack cake into a stunning dessert!


Instead of the basic butter pound cake, I tried Matcha flavour which is just adding Matcha powder into the basic recipe, for that extra earthy flavour.

I should have double up the amount of ingredients/use smaller loaf pan because my pound cake came out fat and short. ~>_<~

 

Ingredients 

3 eggs, room temperature

150g low protein flour

120g unsalted butter (original recipe is 150g), room temperature

120g castor sugar (original recipe is 150g)

2g baking powder

1 tablespoon Matcha powder

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

Step 1: Preheat the oven to 180°C and grease a loaf pan with butter.

Step 2: In a mixing bowl whisk the unsalted butter and sugar until light and fluffy. Add the eggs, one at a time, mix until combined, scraping the sides as needed.

Step 3:  Add in the flour, baking soda and Matcha powder slowly until everything is combined evenly.

Step 4: Scrape the batter into the prepared loaf pan (Step 1) and smooth the top. Bake for 40-50 minutes, or until a knife inserted comes out clean. 

Step 5: Remove from the oven and let cool on a wire rack for 20 minutes. Slice into pieces and serve.
