Yen Can Cook: Minced Meat Potato
A simple recipe as usual today. Nothing too fancy but a quick and easy to prepare comfort food that goes well with rice or as noodle’s topping.
Ingredients (Serve: 3-4)
200g minced pork
200g potato, diced
100g onion, diced
60g carrot, diced
2 tablespoons minced garlic
2 stalks spring onion, chopped
1.5 tablespoons soy sauce
3 tablespoon Chinese cooking wine
0.5 tablespoon sugar
1 tablespoon black vinegar
A dash pepper
50ml water
Cooking oil

Step 1: Rinse the diced potatoes under cold water to wash away the surface starch. Soak potato in water for 5 minutes to prevent them from turning dark.
Step 2: Drain off and pat dry the potatoes with kitchen paper. Heat up pan with oil over medium-high heat. Stir fry potato until cooked, set aside.
Step 3: In same wok, sauté the onion until slightly soften. Add in carrot and continue sauté, followed by minced garlic. Stir fry until fragrant.
Step 4: Add pork and spread it out. Do not stir fry immediately. Let it cook till slightly caramelized. Flip it over and let the other side cook for a while. Reduce the heat to low and break up the pork into tiny bits.
Step 5: Add the potato (Step 2), followed by sugar, soy sauce, Chinese cooking wine and pepper. Stir to coat all the ingredients. Pour in water, cover with lid and simmer, stirring occasionally, for 5-10 minutes or until the diced carrots are soften.
Note: Stir fry frequently when adding in the seasoning especially the soy sauce. Stir fry till the aroma of the soy sauce emit before adding in Chinese cooking wine.
Step 6: Lastly, add in black vinegar and chopped spring onion then have a quick stir. Serve.

I thought it looks like my favourite Hainanese Fried Min Chee dish. I knew it’s a new different dish when I noticed the missing worcestershire sauce, star anise and cinnamon bark from the recipe.
TM, I’ve Googled the Min Chee you mentioned, it is a type of pie (Min Chee Pie) and it certainly looks delicious!

Ya, goes well with rice but I see yours is quite dry. Mine usually has lots of gravy (from oyster sauce)…hehe! ^_*
Kris, can also, put more water when simmering then you have a dish with gravy 🙂
