Yen Can Cook ~ Mixed Veggies and Meat Slices Stir Fry

I enjoy different kinds of stir fry, this dish combines some of my favourite veggies and meat slices in savoury oyster sauce. Ready in less than 20 minutes, this one-pan dish is perfect for a quick dinner. Choices of vegetables and meat are versatile, just put in whatever you like or whatever you have in your pantry!

 

Ingredients (Serve: 3-4)

300g pork belly, sliced

5pcs baby corns, cut half

8pcs snap peas, cut half

8pcs cheery tomatoes, halved

1/2 onion, sliced

3 tablespoons oyster sauce

A dash of black pepper

Cooking oil

Salt to taste

Meat Marinade

1 tablespoon soy sauce

1/2 teaspoon pepper

1 teaspoon sesame oil

Step 1: Marinate the pork belly with the marinade for at least 20 minutes. Set aside.

Step 2: Blanched the baby corns and snap peas in boiling water for 1-2 minutes. Drain and set aside.

Step 3: Heat the wok over high heat and add cooking oil to stir fry onion till soften. Add in pork belly slices (Step 1) and continue cook until the meat changed colour. 

Step 4: Add in baby corns and snap peas (Step 2) and continue stir fry. Add in oyster sauce, stir to combined.

Step 5: Add in cherry tomatoes, stir fry for 1 more minutes, season with black pepper and salt.

Step 6: Serve.
