Yen Can Cook ~ Mixed Veggies Bacon Soup

I would call today’s recipe as westernized ABC soup (*^-゚)v Ingredients needed are similar (or same) with the ABC soup that very common in all Chinese households. Those ingredients in my recipe can be substituted with any vegetables that available in your pantry, it’s kind of clear fridge recipe that you can simply whip up in less than 30 minutes.
Ingredients (Serve:3-4)
2-3 rashers of bacon, diced
2 potatoes, peeled & diced
1 carrot, diced
2 tomatoes, diced
100g corn kernels
1500’L water/ stock
Salt and pepper to taste

Step 1: Heat a saucepan and pan fried the diced bacon till golden brown. Drain on paper towels and set aside.
Step 2: With the same saucepan, with the oil released from the bacon, slightly saute all the vegetables. Pour in water/stock and bring to boil.
Step 3: Add in the bacon (Step 1) and reduce to low heat. Simmer for 30-45 minutes.
Step 4: Season with salt and pepper as per desired. Serve.

Yes, I’ve been doing quite a bit of 11.11 shopping…hee..hee! 😉 I’ve heard of pancetta in soups but not bacon. Seems a bit sayang-lah to put in soups….I want to eat them crispy and savoury…hihihi! ;D
