Yen Can Cook ~ Onion Braised Chicken

How is everyone doing? It’s day nine of Movement Control Order (MCO) and I believe your cooking skills has been honed perfectly during this period as homecook food is the best option for now. However if your cooking skill is still in amateur level but want to prepare a decent meal at home, you can always counting on the my recipes to get some ideas for your next meal.

Today’s recipe, as usual, is a simple and fast and the ingredients can be easily purchased from all supermarkets, wet markets, and even online purchase (the hot trend now).

Ingredients (serve: 3-4)

6 chicken drumsticks

3 yellow onions, sliced

8 bulbs garlic

10g ginger, sliced

4 tablespoons soy sauce

2 tablespoons mirin

80ml cooking wine

1 teaspoon black pepper

20ml water

Cooking oil

Spring onion for garnishing, chopped

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Step 1: Heat up the skillet and swirl in the cooking oil, add in garlic and ginger, stir fry till fragrant.
Step 2: Add in chicken drumsticks, sear 3-5 minutes for each side until slightly browned. Take out and set aside.
Step 3: In the same skillet, add in sliced onions, slightly stir fry for 1-2 minutes and spread evenly on the skillet. Lay the chicken drumsticks (Step 2) on the onion layer.
Step 4: Pour in soy sauce, mirin, cooking wine, black papper and water. Cook with lid on until boiling, reduce the heat and simmer for 20minutes.
Step 5: Open the lid and flip the chicken drumsticks over and cook for another 10-15 minutes, depends on the thickness of the chicken.
Step 6: Garnish with chopped spring onions and serve.
Note: You may add in fresh chili (during Step 1) for extra kick.
