Yen Can Cook ~ Peanut & Walnut Pork Ribs Soup

I learn this recipe from a Hong Kong cooking show hosted by Maria Cordero (aka Fei Ma) which call for peanuts and walnuts, as well as other common soup boiling ingredients such as dried longan and candied dates. The soup is mild in flavour and easy to the palate yet packs with nutrition. It helps to improve brain health and prevent heart disease.

Ingredients (Serve: 3-4)

500g pork ribs
30g peanuts, washed and soaked for 2 hours
30g walnuts, washed
1 carrot, cut into chunks
8-10 dried Longan
2 dry candied dates
3pcs ginger
2500ml water
Salt to taste
To blanch the pork ribs
1 tablespoon of cooking wine
A few slices of ginger
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Step 1: Bring a pot of water to boil, add in cooking wine and ginger. Scald the pork ribs  in boiling water to remove blood and impurities. Remove, drain and set aside.
Step 2: Put all the ingredients into a pot and add in water until enough to immerse all the ingredients. Bring to boil and lower the heat and let the soup simmer for 2-3 hours.
Step 3: Add salt to taste and serve.
HAPPY COOKING!
