Yen Can Cook: Pickled Pumpkin
Pickled pumpkin, another simple recipe to use up the leftover pumpkin other than the pumpkin soup I’ve shared previously.
Ingredients
500g pumpkin
5-6 sour plums
12 limes
100g sugar
30g salt
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Step 1: Cut the pumpkin into small pieces and thinly sliced.
Step 2: Sprinkled some salt to the sliced pumpkin and wait for 5 – 10 minutes. This is to remove the excess water from the pumpkin and soften it.
Step 3: Rinse the pumpkin, drain and set aside.
Step 4: Halve the lime and squeeze the juice.
Step 5: Mix well the lime juice, sour plums, sugar and pumpkin and put into refrigerator for a few hours. Serve chilled.
Crunchy and healthy homemade pickle!
Pumpkin and be substitute with mango or green papaya too.

Oh we’ve pickled everything except this. Mainly I think.. cause no one likes pumpkin at home. I gotta try this some time. Looks lovely !!
Actually there is no any pumpkin taste and just like pickled green mango omit the sourness 🙂
