Yen Can Cook: Scotch Eggs (Air Fryer Version)
At Sam’s request, I bought a box of quail eggs last 2 weeks and instead of just boil and eat I was thinking a recipe that can associate the eggs into dish. Scotch Eggs that’s it!
Scotch egg, a classic British dish that consists of a shelled hard-boiled egg, wrapped in a sausage meat mixture, coated in breadcrumbs, and deep-fried. While the vast majority of recipes call for chicken egg & sausage meat, my version is using quail egg and minced pork which was part of my purchase from Blue Cow Butcher.
Ingredients
6 quail eggs
150g minced pork (half lean, half fat)
1 teaspoon of salt, pepper and sage leaves
Carrot, finely chopped (optional)
French beans, finely chopped (optional)
1 teaspoon salt, pepper, sage leaves
2 eggs
50g breadcrumbs
All purpose flour

Step 1: Cook the eggs in boiling water until fully cooked, approximately 2-3 minutes, then plunge into cold water and carefully peel.
Step 2: Mix minced meat, chopped carrot, French beans, salt, pepper, sage leaves and 1 egg in a bowl, blend well and stir the mixture until become paste form. The mixture should be sticky.
Step 3: Place another egg (beaten) into a shallow bowl and bread crumbs into separate bowl.
Step 4: Roll the hard-cooked eggs in All purpose flour then mold the minced meat mixture (Step 1) around the eggs, carefully roll into a round.
Note: Purpose of roll the eggs in flour is to make the meat mixture cling better.
Step 5: Dip each egg in the beaten egg, then the breadcrumbs until fully coated.
Step 6 : Pre-heat air fryer at 180ºC. Lightly brush the grill with cooking oil. Place eggs and air fry for 10-15 minutes, flip the meat balls for even browning. Alternatively, deep fry the meat balls in heated oil for until golden brown then drain on kitchen paper before serving.
