Yen Can Cook ~ Tea Tree Mushrooms Soup 茶树菇汤
Tea Tree Mushroom 茶树菇, Cyclocybe Aegerita, also know as willow mushroom or poplar mushroom, is a medium-sized mushroom with a very open and convex cap. It is used in Chinese cooking, both fresh and rehydrated, in various dishes, including stir-fry, soup, stew, and hot pot. The mushrooms offers a good source of protein, as well as 8 different kinds of essential amino acids, abundant of vitamins and minerals. The mushroom has an intense woody and earthy flavor which provide a nice flavour to the soup or stew.
Ingredients (serve: 3-4)
1/2 chicken(approximately 500g – 600g), cut into pieces
100g Tea Tree Mushrooms
6-8 red dates, de-seeded
Handful of wolfberries (Goji)
2500ml water
Salt to taste

Step 1: Clean the dried Tree Tree Mushrooms and soak the mushrooms in warm water for 2 hours. Trim the roots of the mushrooms and keep the mushrooms soaking water.
Step 2: Bring a pot of water to boil, scald the chicken in boiling water to remove blood and impurities. Remove, drain and set aside.
Step 3: Put all the ingredients (except the wolfberries & salt) into a pot and add in water (included the mushrooms soaking water) until enough to immerse all the ingredients. Bring to boil and lower the heat and let the soup simmer for 2-3 hours.
Step 4: Add in wolfberries, season with salt and serve.

Mushrooms in soups are really nice….but I’ve made this soup with the exact same ingredients (but without the mushrooms) and it tasted like a great herbal soup (without any Chinese herbs)! ^.^
Kris, without the mushrooms means your soup contained only chicken, red dates and wolfbrerries?
