Yen Can Cook ~ Thai Basil Minced Pork

Phat Kaphrao or Pad Kra Pao/ Pad Krapow, is one of the popular Thai stir fry dishes that consists of meat such as pork, chicken or beef, stir fried with Thai holy basil and garlic. It is commonly served with rice and topped up (optional) with fried eggs. It’s usually a slightly spicy dish which involve chilies as one of the ingredients, but since Sam still cannot take spicy (=.=”), so my recipe would be a non-spicy version.


 

Ingredients (Serve: 3-4)

300g minced pork (can substituted with chicken or beef)

One handful holy basil leaves (Thai sweet basil or regular Italian basil will work just fine also if you cannot get holy basil)

1 tomato, diced

1 chili, sliced (I omitted and bird eye chilies can be used)

3-4 gloves garlic, minced

1 teaspoon lemon juice (optional)

Cooking oil

Sauce

1.5 tablespoons soy sauce

1/2 tablespoon oyster sauce

1 tablespoon fish sauce

2 rock sugar/1 teaspoon sugar

Step 1: In a bowl, mix well all the ingredients for sauce.

Step 2: Heat up cooking oil in a wok/skillet, add the minced garlic and sauté until fragrant. Add the chilies and cook for another minute then add the minced pork, use spatula to break up the clumps and cook until changed colour.

Step 3: Add in diced tomato and stir fry for 1 minute, then pour in the sauce mixture (Step 1).  Stir fry until meat, diced tomato and sauce are well combined. You may adjust the taste on this step, add soy sauce and fish sauce if under-seasoned or diluted with water if too salty.

Step 4: Add the basil leaves and stir-fry until just wilted.

Step 5: Drizzle with lime juice and serve.
