Yen Can Cook: Tofu Chicken Patty
I always love recipes which I can prepare a batch and freeze in the fridge, so when I run out of idea what to cook for dinner, I can simply thaw some out, cook and serve. Today’s recipe of savory, soft and juicy pan-fried meat and tofu patties is really a keeper. These patties have a great meaty texture and the ingredients combination is highly customizable. Instead of chicken, you may use pork or beef and the onion can be replaced by any vegetables you like such as cabbage, corn, carrot, water chestnut or jicama. Herbs such as parsley or spring onion can be added too for that extra fragrance.
Ingredients (Serve: 3-4)
160g minced chicken
350g firm tofu, mashed
1/2 onion, chopped
25g bread crumbs
60cc milk
2 eggs
1/2 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon onion powder
Cooking oil

Step 1: In a large bowl, mix all the ingredients and combine well until the mixture gets a little sticky. Then divide into 12 portions.
Step 2: Roll each piece into a ball between your palms, then flatten into a disc shape.
Step 3: Heat up oil in a pan, fry the patties until one side becomes slightly brown over medium fire (around 3 minutes) and then turn over to fry the other side. Serve
Note: You can make a larger batch and keep the cooked meat patties in zipper bag and store in freezer up to 2-3 weeks.

I wonder if these tofu cakes will splash when fried as I see quite a bit of water content in them….tofu, eggs & milk but they do look delicious.
Kris, since I’m just shallow fried those patties, so no splashing problem happen 🙂

Homemade patty is way healthier. I always make our own burger patty for weekend indulgence 😀
