Yen Can Cook ~ Tomatoes Braised Pork Ribs
I have been telling you guys that I love pork ribs and I’ve shared a few pork ribs recipes in my blogs, from steamed, fried to braised. Today’s recipe is also a braised pork ribs recipe and there is another one is in the queue too. ^ω^
Ingredients (Serve: 3-4)
450g – 500g pork ribs
2-3 large tomatoes, cut into small wedges (peeled or unpeeled)
3 cloves garlic, minced
1 teaspoon soy sauce
500ml – 600ml water
Salt and sugar to taste
Cooking oil
Chopped spring onion for garnishing (optional)

Step 1: Clean the pork ribs then put them a pot of water and bring to a boil, to remove blood and impurities. Remove, drain and set aside.
Step 2: In a wok, heat up some cooking oil then add in garlic and saute till fragrant.
Step 3: Add in tomato wedges, stir fry for 1-2 minutes. Add in pork ribs (Step 1) then stir to combine.
Step 4: Add in water and soy sauce, bring to a boil and simmer for 30 minutes with low heat or until the pork ribs are tender. Extra HOT water can be added if the gravy runs dry. Stir occasionally to avoid burning on the bottom.
Step 5: Season with sugar and salt.
Step 6: Serve.

Did someone gift you a crate of tomatoes? Lol…either that or you must love tomatoes very much…this is like the 4th recipe in 3 weeks (I think) that involve tomatoes…kekeke! 😉 I’m also a fan of pork ribs especially when they’re braised.
Kris, I always get tomatoes when grocery shopping as they are very versatile to be cooked into different dishes, be it for my bento lunch (tomato soup, tomato egg konjac noodles) or dinner.
