Yen Can Cook ~ Vegetarian Fried Noodles

A quick and simple vegetarian fried noodles that can be whipped up for weekdays’ dinner. Ingredients used are flexible, from assorted mushrooms (Shiitake, Shimeji, Eryngii, button mushrooms, etc) to variety of vegetables such as carrot, celery, baby bok choy and burdock, just to name a few. This simply a great recipe to help you clear out the fridge!

 

Ingredients (Serve: 3-4)

350g yellow noodles 

1 onion, sliced

1 packet Shimeji mushrooms, root trimmed

100g oyster mushrooms, tear into small pieces

10pcs snap peas, cut half and blanched

Salt & black pepper to taste

Cooking oil

Sauce

3 tablespoons sake

3 tablespoons soy sauce

1.5 teapoons sugar

180ml water

Note: Choice of noodles and mushrooms are flexible depends on preference and availability.

Step 1: In a bowl, mix all the ingredients of the sauce until evenly combined. Set aside.

Step 2: Blanch the yellow noodles in a pot of water till cooked. Drain and set aside. 

Step 3: Heat the wok over high heat and add cooking oil to stir fry onion until soften and slightly browned. 

Step 4: Pour in sauce mixture (Step 1) and stir fry to mix well with the mushrooms and onions. Add in yellow noodles (Step 2) and continue stir fry until the noodles is evenly coated with the sauce. 

Step 5: Add in blanched snap peas and season with black pepper and salt if desired.

Step 6: Serve.
