Yen Can Cook ~ Lotus Root Soup
Lotus root, as the name implies, is the root of the lotus flower and it is one of the more common vegetable used by Chinese for soups and stir-fry dishes. I believe most of us in a Chinese household would have fond memories of having this soup regularly while growing up.
This soup is not only very simple to prepare but tasty as well and has high nutritional values too. Lotus root is a good source of dietary fiber, Thiamin, Vitamin B6, Phosphorus, Potassium, Copper, Manganese and Vitamin C.
Different families use slightly different accompanying ingredients to make this soup. The main ingredients are lotus root and pork. In this recipe I included dried cuttlefish for extra flavor and fragrance.
Ingredients (serve: 3-4)
500g pork ribs
100g peanuts, soak in hot water
1 dried cuttlefish

Looks really good! My partner would enjoy this soup. I have cooked before but without the sotong. Must go and buy some as it will give the soup a lot of oomph!
PH, flavour of the soup really enhanced by the dried squid as previously I boiled this soup without the dried squid, the taste was different.
Simple soup that I love, I do add red dates too in this sometimes, or dried scallop.
