Yen Can Cook ~ Lotus Root Soup

Lotus root, as the name implies, is the root of the lotus flower and it is one of the more common vegetable used by Chinese for soups and stir-fry dishes. I believe most of us in a Chinese household would have fond memories of having this soup regularly while growing up.


This soup is not only very simple to prepare but tasty as well and has high nutritional values too. Lotus root is a good source of dietary fiber, Thiamin, Vitamin B6, Phosphorus, Potassium, Copper, Manganese and Vitamin C.

Different families use slightly different accompanying ingredients to make this soup. The main ingredients are lotus root and pork. In this recipe I included dried cuttlefish for extra flavor and fragrance.

Ingredients (serve: 3-4)

600g lotus root cleaned, peeled and cut into 1 cm thick slices

500g pork ribs

100g peanuts, soak in hot water

1 dried cuttlefish

2500ml water
Salt to taste

Step 1: Toast the dried cuttlefish in a toaster oven about 4 to 5 minutes each side until fragrant. Remove and set aside.
Step 2: Put the pork ribs Into a pot of water and bring to boil, to remove blood and impurities. Remove, drain and set aside.
Step 3: Put all the ingredients (except salt) into a pot and add in water until enough to immerse all the ingredients. Bring to boil and lower the heat and let the soup simmer for 2-3 hours.
Step 4: Season with salt and serve.
