Yen Can Cook ~ Papaya Milk with Peach Gum
Still remember the peach gum Tong Sui recipe that I shared earlier? I love the gelatin texture of the peach gum and always want to try out more recipes that featuring this collagen packed ingredient. This gemstone-lookalike is definitely a delight to both our palate and skin.
Peach gum is best enjoyed in sweet soups and desserts, today’s recipe incorporates the peach gum into classic recipes of double-boiled papaya in milk, but with a simpler method of just normal boiling.
Ingredients (Serve: 3-4)
1/2 papaya (ripe & firm), peeled, deseeded & cut into cubes
20g peach gum
350ml milk
400ml water
80g rock sugar or to taste

Step 1: Soak peach gum in clean water for overnight until soften. Pick and remove the dirt and impurities.
Step 2: In a pot, bring the water to boil, add in peach gum and rock sugar, cook for 5 minutes until the rock sugar dissolved. Stir occasionally.
Step 3: Add in papaya cubes and boil for another 2 minutes.
Step 4: Pour in milk and bring to boil.
Step 5: Off the heat and adjust the sweetness as per desired.
Step 6: Serve hot or cold.

Milk shouldn’t be boiled at step 4. The milk is separated and doesn’t look good now
