Prosperous Abalone and Salmon Yee Sang with Rice Crackers 响铃鲍鱼三文鱼捞起

Our festive feast that evening begun with the obligatory Yee Sang. A platter featuring slivers of salmon and abalone nestled among the colourful ingredients of this festive salad.

Honored to be part of the auspicious ritual of tossing for prosperity, our evening was filled with beautiful wishes to usher in the Year of the Earth Dog!

Steamed Capon Chicken Traditional Style 白切腌鸡

The next dish is a classic rendition of steamed chicken that appears on major tables during the festive season. The skin of the corn-fed capon exudes a nice tinge of color from the food. The chook has a firm bite with smooth tender skin, paired with dried golden needle flowers for a delicate and wholesome flavor. One can also jazz up the flavor with the ginger sauces for extra kick.

Steamed Cod Fish with Superior Soya Sauce and Black Fungus 云耳鲜枝竹蒸鳕鱼
When the ingredients are fresh, one only needs a simple method to turn it into a star. Our fish course undoubtedly the crowd pleaser that evening with its sweetness shone in full glory while the superior soya sauce gave the fish a boost of yumminess. Fresh bean curd sticks and black fungus were also welcomed after a nice soaking of sauce with finely shredded spring onions and coriander. Simple yet satisfying!

Oven Baked King River Prawn with Cheese 日式烤大生虾

Halved jumbo prawns beautifully smothered in melted cheese sauce and baked till browned and aromatic. I got mine with plenty of luscious prawn roes and it just can’t get any better than this.… One is definitely not enough!

Braised Abalone Limpet, Sea Cucumber and Dried Oyster with Garden Greens 鲍螺片海参沙井蚝时蔬

The next dish was a glorious union of festive ingredients such as sea cucumber, abalone limpet and dried oyster crowned with the prosperous Fatt Choy. The big oysters andabalone limpet with great umami flavor were nicely paired with sea cucumber for a delightful texture and flavor combination. I enjoyed the gelatinous texture of the sea cucumber with a lot of collagen which is good for our skin. ^__^ All the ingredients had absorbed the delicious flavours of the rich brown sauce, harmonized every element in one united flavour.

Claypot Fragrant Rice with Preserved Waxed Meats 瓦煲腊味饭

It’s the time of the year where waxed meat is featured on most tables. The meticulously chosen premium waxed meat from Hong Kong, we had a very delectable looking plate of Chinese sausages, waxed duck, waxed chicken and chicken liver sausages!

The assorted waxed meats were steamed with the rice to let the flavors meld together before being presented separately. The rice cooked in the huge clay pot had my favorite combo of fluffy rice with bits of crispy rice layer at the bottom. Mix with the meat essence and the chef’s special soy sauce, the rice was tainted with glorious savory flavor that had us compulsorily tucked into it in gusto although we were quite stuffed when this was served.

Sweet Duets 幸福美点双辉
Deep fried Nian Gao with Pandan lotus paste paired with Osmanthus jelly.

Double Boiled Snow Lotus with Longan and Snow Fungus 元肉银耳炖雪莲子
A sweet ending to our sumptuous dinner.
