Yen Can Cook ~ Salted Egg Bitter Gourd
Since I’m the only person in my family that like to eat bitter gourd, so I had to divide my bitter gourd into two portion, with one portion cooked into Braised Chicken with Bitter Gourd and another portion cooked into today’s recipe of Salted Egg Bitter Gourd.
Both bitter gourd dishes are very common in any Chinese Dai Chow restaurants and it can be easily prepared at home too. Like the previous bitter gourd dish recipe, please take note on the amount of the ingredients because those are for 1 pax serving instead of 3-4 pax which I normally did.
Ingredients (Serve: 1)
100g bitter gourd
1 salted egg, cooked, egg white and egg yolk separated.
2 cloves garlic, minced
Sugar & salt to taste
Cooking oil
Chopped spring onion for garnishing (optional)

Step 1: Mashed the cooked salted egg yolks and set aside. Roughly cut the salted egg white into small pieces and set aside.
Step 2: Cut the bitter gourd in half lengthwise and scrape out the seeds and white pulp with a spoon. Cut into thin strips. To reduce the bitterness, rub bitter gourd slices with salt. Let sit for 15-20 minutes then rinse. Skip this step if you don’t mind the bitter taste.
Step 3: Bring a pot of water to boil, blanch the sliced bitter gourd for 1-2 minutes. Drain and set aside.
Step 4: Heat up some cooking oil in a wok and saute minced garlic until fragrant. Add the mashed salted egg yolk and egg white (Step 1), continue to stir fry until bubbles forming.
Step 5: Add in blanched bitter gourd (Step 3), stir and mix well. Season with sugar and salt.
Step 6: Garnish with chopped spring onion and serve.

Just like you, I’m also the only one in my family who eats bitter gourd, that’s why I seldom cook it at home coz I’ll have to look for the smallest bitter gourd (and that’s not always possible), otherwise I may have to cook it in 3 – 4 portions to finish it. Better I just eat it when I see it in the chap fan line….haha! ^_*
Kris, same lor, will get the bitter gourd dish whenever I see at Zap Fan but seldom takeaway nowadays, so have to cook at home when craving for it. 🙁

I love to eat bitter gourd and egg so I prefer bitter gourd egg rather than bitter gourd chicken. Your family members don’t even eat the chicken in the chicken bitter gourd dish?
Mun, they don’t like bitter gourd dishes with pronounced bitter taste. They can accept the soup because the tanginess of the pickled mustard green and tomato effectively masked the bitterness of the bitter gourd.
I’d like to request without the salted egg white pls, only egg yolk 😛
