Yen Can Cook ~ Steamed Prawns with Glass Noodles
Steaming always the best and healthiest way to prepare food especially when you have fresh seafood such as prawns and fish. This method of cooking not only fuss-free but also retains the natural sweetness and original flavour of the ingredient.
Today I’m sharing a prawn dish which is quick and simple yet presentable, suitable as CNY auspicious dish too!
Steamed Prawns with Minced Garlic & Glass Noodles, the prawns undoubted the main star here but the supporting cast of the glass noddles is equally tantalizing. It absorbed all the sublimely sweet prawn essence as well as the flavours of the sauce and fried garlic, oh so slurpilicious~~
Ingredients (Serve: 3-4)
12 -14 medium size prawns, split back to devein and butterfly the prawns
50g glass noodles, soaked in water until soften, drained
10 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon Chinese cooking wine
1/2 teaspoon sugar
50ml water
A dash of white pepper
Cooking oil
Chopped red chili, for garnishing (optional)

How to prepare the prawns:-
Using kitchen scissors, trim away the whiskers, sharp edges, and legs of the prawns.
Cut a slit, remove the veins and butterfly the prawns.
Use the back of a knife, slightly “pound” the opening of the prawn, so that the opening will remain nicely flatten (without curling up) after being steamed.
Step 1: Heat up cooking oil in a wok and fry the minced garlic until golden brown and fragrant. Dish out and set aside.
Step 2: In a bowl, add in soy sauce, Chinese cooking wine, sugar, water and pepper, mix to well combined. Set aside.
Step 3: Place soaked glass noodles on a heat proof deep plate.
Step 4: Arrange the prawns on top of the glass noodles.
Step 5: Spoon fried garlic (Step 1) onto the prawn, followed by the sauce mixture (Step 2).
Step 6: Prepare steamer by bringing water to boil. Put in the prawns and steam for about 6 – 8 minutes over high heat.
Step 7: Garnish with chopped red chilies and serve.

Wah! That looks so good! And thanks for the pictorial instructions on how to prepare the prawns. Somehow for prawns I prefer them fried but who knows this recipe will change my mind.

Look at that beautifully platter of prawns nicely arranged. Wah, you call those medium-sized prawns? I can’t imagine what your large-sized prawns will look like…lol. My neighbour also cooks her prawns with glass noodles but with a sambal base….hehe. With glass noodles, this is almost like a noodle dish which can be eaten on its own. I’m certainly enticed to try.
Kris, large prawn for me is something like big head prawn, hehe 😛 But I really seldom buy prawns, so I don’t know how to categorize them, haha!
