CNY Kitchen Project: Fried Arrowhead Chips 炸芽菇饼

Chinese New Year is just less than a month away, how’s your preparation? For myself, I’ve started my CNY kitchen project to make some homemade snacks for friends and family. Fried arrowhead chips definitely one of the first that snap into my mind as it is easily can get during this time of the year when CNY approached.

I am starting it with one of the popular snacks for CNY, the arrowhead, known as “Nga Gu” 芽菇 in Cantonese or “Ci Gu”慈菇 in Mandarin. It’s a type of root plant which looks like a small onion and available only during winter time. The arrowhead is starchy and usually peeled and sliced then steamed with Chinese sausage (Lap Cheong).

I have to admit that the fried arrowhead chips is pretty addictive. You never ever stop for just one bite and before you knew it, you have eaten half of the “treasure”.

The market price for “Nga Gu” is about RM10-15 per container which I think is quite steep compared to the cost of doing preparing it. So here’s I’m sharing the recipe.

Ingredients

Arrowhead

Salt

Oil for deep-frying

Step 1: Remove the skin of the arrowhead, cut off the bottom ONLY and keep the stem because you can use it as a handle when u slice it.

Step 2: Slice the arrowhead by using slicer

Step 3: Heat up the oil then turn the fire into medium. Put in some salt.

Step 4: Put the sliced arrowhead one by one into the oil the deep fried until golden brown.

Step 5: Drain the chips from excess oil and cool them completely before storing in airtight container.
