Yen Can Cook: One Pot Vegetables Bean Curd Stew (Vegetarian)
This is a super easy one pot dish whereby you can throw in any vegetables/ protein available in your fridge for the dish. It’s especially great when you need to “spring cleaning” your fridge ð
Here’s my version and ingredients used can be adjusted according to your preference. You may add in pork, chicken, beef or even fish if you want a meaty version.
Ingredients
1 tube egg tofu
1/4 cabbage, cut into big pieces
1 pkt Enoki mushroom
1/2 carrot, sliced
4- 5 baby corns, cut into 1.5 inch length
4 -5 bean curd puffs, halved
1 inch ginger, sliced thinly
3 cloves garlic, minced
700ml stock / water
Cooking oil
Sesame oil
Pepper
Salt to taste

Step 1: In a large pot, heat the oil over medium high heat, saute garlic and ginger and until fragrant.
Step 2: Add in cabbage, baby corn & carrot, stir fried for 2-3 minutes. Add stock /water, bring to a boil. Once boiling, reduce to low heat and simmer for 30 minutes or until vegetables are 80% soften.
Step 3: Add Enoki mushroom, bean curd puffs & egg tofu, simmer for another 5 – 10 minutes until vegetables are soften. Season with salt.
Step 4: Serve and drizzles with sesame oil and dash of pepper for extra fragrance.

I cook like this every single day for the boys. Luckily they are not picky eaters. They actually enjoyed eating like this too. Haha.

I like this comforting dish but both my kids not into tofu…HB also dislike it. I tapao from chap fan stall during lunch time. Sendiri eat.
You can skip the tofu and add in meat, very versatile recipe~
heheh, i will add some crispy pork lard to this dish to make it non-vegetarian ð

I love how you lay the ingredients out like that. I thought it was grass at first coz of the basket and the color but then realized it’s probably carpet or a rug. I also really don’t like tofu but the Japanese tofu with egg like this is still acceptable for me.
The texture doesn’t look like grass lah, haha! Yes, Yee Ling just told me in her comment that u & the kids don’t like tofu and I suggested her to omit the tofu and add in meat ^__*
