Yen Can Cook: Minced Meat with Chive Flower and Fermented Black Beans 苍蝇头

This dish actually has a “not so appetizing” Chinese name, 苍蝇头which literally translated as “heads of flies” (insect). Why this name, you may ask. Because one of the ingredient, the fermented black beans (豆豉) look like head of a fly, the eyes of the fly to be precise. 苍蝇头 is a classic and popular home cook dish at Taiwan, it pair really well with rice or porridge for its robust flavors from the fermented black beans.


Ingredients

1 bunch chive flower, cut into 1cm length

80g minced pork

2 tablespoons fermented black beans (豆豉)

3 cloves of garlic, minced

Chili (optional)

1 tablespoon rice wine

Cooking oil

Salt & sugar to taste

Sesame oil

Step 1: Soak the fermented black beans with rice wine. Drain and keep the rice wine.

Step 2: Heat the wok and add in cooking oil. Add in minced pork, cook until half cooked and separate the meat with a chopsticks to avoid it from forming meat lumps.

Step 3: Add in minced garlic, fermented black beans & chili.

Step 4: Stir fry till fragrance, add in chive flower and continue stir fry for 3-4 minutes.

Step 5: Pour in the rice wine (Step 1) and adjust the taste with salt and sugar.

Step 6: Lastly, drizzle a few drops of sesame oil and serve.
