Yen Can Cook: White Wine Stewed Shimeji
I never know Shimeji Mushroom works so well with white wine and it’s a simple dish that everyone can whip up easily at home within 10 minutes. Trust me, if Yen Can Cook, So Can You! LOL

Ingredients (servs: 2-3)
200g Shimeji Mushroom
3 cloves shallot, finely chopped
1 teaspoon butter
100cc white wine
1 teaspoon fresh/dried parsley, finely chopped
Salt & pepper to taste

Step 1: Cut the root of the Shimeji Mushrooms and separated into individual stalks.
Step 2: Melt butter in a sauce pan over medium-low heat. Add the minced shallot, sauté till fragrant.
Step 3: Add in mushrooms and cook them gently, stirring frequently, until they are tender—3 to 5 minutes. Add in white wine then turn to low heat and cook for further 1-2 minutes.
Step 4: Add in parsley, season with salt and pepper. Serve.
