Yen Can Cook: Spring Onion Oil Noodles 葱油拌面

It’s FriYay, so let’s have a really quick post today, along with a lightning fast recipe! This is a SUPER simple yet delicious Chinese noodle recipe anyone can make ~ Spring Onion Oil Noodles (葱油拌面).


 

Ingredients (Serve: 2-3)

15g dried shrimps

3 bunches spring onion, cut into 2 inch long trips

75ml soy sauce

2 teaspoons sugar

3 tablespoons cooking oil

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

Step 1: Soak the dried shrimps with hot water in a bowl for 30 minutes, or until softened. Drain and set aside.

Step 2: Heat a large wok over high heat, add in the oil then toss in the green onions and stir-fry until they are turning a little golden.

Step 3:  Add the dried shrimps to the wok and continue to stir-fry until the spring onions are well browned and fragrant, but not burnt.

Step 4: Pour in the soy sauce and sugar, stir to thoroughly coat. Transfer the mixture to a bowl and the sauce is ready to use.

 

The soy sauce and spring onion infused oil is really packs a punch. The addition of dried shrimps provide a pleasant umami savourinessto the sauce. The recipe sound simple but the flavor is so irresistible. Omit the dried prawn if you want to make it vegetarian friendly and it can be as delicious.
