Yen Can Cook: Scrambled Egg with Shrimp
A really short post today of simple recipe ~ Scrambled Egg with Shrimp.
Shrimp is not a common ingredient in my household because none of us is fan of it but I have some balance from my previous recipe, so I whipped up this super easy yet delicious scrambled egg dish.
Ingredients (Serve: 3-4)

6 eggs, at room temperature
12 – 15 shrimps, shelled and deveined
3 tablespoons milk
2 spring onion, chopped
1 teaspoon salt
A dash of white pepper
Cooking oil
Marinade
1 teaspoon salt
1 teaspoon Chinese cooking wine
1/2 teaspoon corn starch

Step 1: Marinate the shrimps with marinade for 20 minutes.
Step 2: Boil a pot of water and toss in the shrimps until they just turn pink, don’t overcook them. Remove, drain and set a side.
Step 3: Beat the eggs in a large bowl, add in chopped spring onion, milk, salt and white pepper, mix well. Add in shrimps (Step 2).
Step 4: Heat oil in a frying pan or wok, pour in the egg mixture (Step 3). Use a spatula to fold the eggs gently but quickly until it is almost cooked but still moist.
Step 5: Dish up and serve.

Simple and good, my type of dish and I am also one of those who are not that crazy about shrimps. But I will still eat them.
PH, luckily we are not fan of shrimps as they are so expensive now >_<
maybe can also do a mixed seafood version with shrimp and scallops in the egg π

I always fried eggs but never thought of adding shrimps which are my favourite.
TM, this dish is a quite common and I’m quite surprise you never have it!
