Yen Can Cook ~ Shallot & Mushroom Chicken Soup
How’s your Chinese New Year preparation? Actually I have been doing my spring cleaning since 3 weeks ago till date. It’s almost 90% done and the last chore to be completed is cleaning my fridge , before I can officially make my “Sou Gong” announcement.
When I was tidying my pantry the other day, I found that I accidentally bought two bag of shallots (those in mesh bag) and I decided to boil this easy shallot soup which I learnt from my mom. The ingredients needed are simple, just shallots and meat (pork or chicken) but since I had some fresh Chinese mushrooms, I add them too.
Ingredients (serve: 3 – 4)
1 Kampung Chicken (free range chicken), about 700-800g, cut into chunks.
300g red shallots
6-8 Chinese Mushrooms (optional)
Salt to taste
2500ml water

Step 1: Peel the skin of the shallots and leave them whole without cutting.
Step 2: Put the chicken into a pot of water and bring to boil, to remove blood and impurities. Remove, drain and set aside.
Step 3:Put all the ingredients (except salt) into a pot and add in water until enough to immerse all the ingredients. Bring to boil and lower the heat and let the soup simmer for 2-3 hours.

Gong Xi Fa Cai! I must try this soup because I always buy shallots with intention to make rempah but always end up they start to become spring onion LOL!
PH, yes, good way to use the overbought onion and grow spring onion is another way to use them up too 😛
