Yen Can Cook ~ Peanut & Walnut Pork Ribs Soup
I learn this recipe from a Hong Kong cooking show hosted by Maria Cordero (aka Fei Ma) which call for peanuts and walnuts, as well as other common soup boiling ingredients such as dried longan and candied dates. The soup is mild in flavour and easy to the palate yet packs with nutrition. It helps to improve brain health and prevent heart disease.
Ingredients (Serve: 3-4)
Step 1: Put the pork ribs/pork soup bones/chicken, ginger and cooking wine into a pot of water and bring to a boil, to remove blood and impurities. Remove, drain and set aside.
Step 2: Put all the ingredients (except salt) into a pot and add in water until enough to immerse all the ingredients. Bring to a boil and lower the heat and let the soup simmer for 2-3 hours.
Step 3: Add salt to taste and serve.

That’s interesting that walnuts are used in this soup. I am familiar with peanuts in soup and my partner loves it. It took quite some time for me to like it because the first few times, I kept thinking of peanut butter. LOL!
PH, I actually bought soup pack that contains walnuts too, paired with monkey head mushrooms and other herbals.
I would also have never thought of putting walnuts in soups. You have an interesting way of blanching the pork ribs. Is that so that you can take away the porky smell? ^_*

I learn this method from videos of youtubers from China, as both wine and ginger (some put spring onion as well) manage to eliminate the pork smell.
