Yen Can Cook ~ Stir Fried Garlic Scapes with Pork

Do you know or have you seen this vegetables?


These are Garlic Scapes,  the tender stem and flower bud of a hardneck garlic plant.  If left unharvested, the scapes eventually bloom flowers when the garlic plant fully matures. However, the scapes are usually harvested before they flower so the garlic plant can channel all its energy into producing the most flavorful bulbs.

They look similar with spring onion with long and thin green stalk but the texture is harder, like asparagus. Garlic scapes taste like a unique blend of onion, scallion and garlic. However, scapes are usually less fiery and have a fresher, “greener” taste than the actual garlic bulbs.

Garlic Scapes can be eaten raw or cooked, such as stir fry or blanched and add into salad, , grilled and scape soup for the Western style. For Chinese style, simple stir fry with any protein (beef, pork, chicken, prawns or scallops) or even waxed meat (Lap Cheong or Lap Yoke) is one of the common cooking methods, just like what I’m going to share today.

 

Ingredients (Serve: 3-4)

300g pork, cut into strips 

400g-500g garlic scapes,  cut into 2-3 inch sections

2 tablespoons water

Cooking oil

Salt to taste

Meat Marinade

1 tablespoon soy sauce

1/2 teaspoon pepper

1 teaspoon sesame oil 

1/3 teaspoon corn starch

Step 1: In a bowl combine all marinade ingredients then marinate pork for 10-15 minutes.
Step 2: Heat the wok over high heat and add cooking oil to stir fry pork slivers (Step 1), until the meat changed colour. 
Step 3: Add in garlic scapes and continue stir fry for a minute. Add water and let cook for another 1-2 minutes. Season with salt if desired.
Step 4: Turn heat off then serve.
