Yen Can Cook ~ Stir Fried Garlic Scapes with Pork
Do you know or have you seen this vegetables?
These are Garlic Scapes, the tender stem and flower bud of a hardneck garlic plant. If left unharvested, the scapes eventually bloom flowers when the garlic plant fully matures. However, the scapes are usually harvested before they flower so the garlic plant can channel all its energy into producing the most flavorful bulbs.
They look similar with spring onion with long and thin green stalk but the texture is harder, like asparagus. Garlic scapes taste like a unique blend of onion, scallion and garlic. However, scapes are usually less fiery and have a fresher, “greener” taste than the actual garlic bulbs.
Garlic Scapes can be eaten raw or cooked, such as stir fry or blanched and add into salad, , grilled and scape soup for the Western style. For Chinese style, simple stir fry with any protein (beef, pork, chicken, prawns or scallops) or even waxed meat (Lap Cheong or Lap Yoke) is one of the common cooking methods, just like what I’m going to share today.
Ingredients (Serve: 3-4)
300g pork, cut into strips
400g-500g garlic scapes, cut into 2-3 inch sections
2 tablespoons water
Cooking oil
Salt to taste
Meat Marinade
1 tablespoon soy sauce
1/2 teaspoon pepper
1 teaspoon sesame oil
1/3 teaspoon corn starch

Honestly this is my first time seeing Garlic Scapes. Ouh…they look really different. In fact I have not seen any over here.
Tekkaus, I knew this vegetable quite some time ago and only met it recently.
I believe I have seen and eaten garlic scapes before at a restaurant. If I see it at the supermarket, I will buy and try out your recipe. I’m certain it is delicious.
PH, if not mistaken, it’s a seasonal vegetable and hopefully you still can get it.
I’ve never seen this before. I’m sure I would love it since I’m a big fan of spring onions.
Kris, actually its taste more like garlic (it is garlic after all ^__^), but the flavour is very very mild and as a garlic hater, I can accept, LOL
I thought spring onion pula, garlic scapes.. learned something new today.
