Yen Can Cook ~ Kimchi Pancake
Still remember the failed Kimchi Pancake that I mentioned in my Sesame-Seasoned Spinach recipe post? Here’s my successful attempt! *throw confetti
Ingredients (Serve: 3-4)
150g all purpose flour
150g cabbage kimchi, coursely chopped
150g potato starch
1/2 teaspoon salt
200ml Kimchi juice
80ml water
Cooking oil
Dipping sauce
2 tablespoons soy sauce
2 tablespoons water
2 teaspoons rice vinegar
2 teaspoons sugar
1 teaspoon sesame oil
0.5 teaspoon toasted sesame seeds

Step 1: In a large bowl, combine the flour, potato starch, and salt until combined. Add the Kimchi, Kimchi juice and water, stir the mixture until well-combined.
Step 2: Heat some cooking oil in a skillet over medium high heat. Add the batter to the pan, spread it evenly into a thin round shape. Cook the pancakes until set and lightly browned. Flip and cook until browned on second side.
Step 3: Remove the pancake from the skillet, slice it into easy to bite-size. Serve with dipping sauce.
