Yen Can Cook ~ Tomato Tofu Clams Soup
Learn this from a cooking Youtube channel [Biao Di Hao Zhu Yi 表弟好煮意] which has been live streaming his cooking demonstration for 365 days on daily basic since last year March (during MCO1.0 period). Seafood and tomato is a very common combination in Western cuisine such as seafood pasta in tomato sauce, seafood tomato soup or seafood stew in tomato sauce. Chinese food on the other hand, I can’t really relate much and the only dish I can think of is fish/prawns in sweet and sour sauce, if they are under this combination. 😛 Or do you know any dishes?
The marriage of flavour of the sweetness from the seafood & tanginess from the tomatoes is a combination that can’t go wrong for everyone. So I know I have to try out this recipe when I saw him shared it a one month ago. The result was so satisfying, and it’s definitely a keeper!
Ingredients (Serve: 3-4)
2 packets frozen Asari Clams (500g each)
4 medium size tomatoes, skin peeled, diced
1 box soft tofu, cut into small size cubes
4 cloves garlic, minced
1/2 thumb-sized ginger, julliened
1 tablespoon cooking wine
1000ml water
Cooking oil
Salt & sugar to taste

Step 1: Heat a saucepan with some cooking oil and saute the garlic and ginger until fragrant.
Step 2: Add in diced tomatoes, stir fry until soften and juices released. Pour in water and bring to a boil.
Step 3: Let the broth cook with low heat for 10-20 minutes.
Step 4: Add in Asari Clams (included the essence in the packaging), turn to medium heat and bring it to a boil again.
Step 5: Let the broth cook with low heat for 5 minutes more and add in the tofu gently. Add in cooking wine and continue to cook for another 2-3 minutes.
Step 6: Season with salt and sugar as per desired.
Step 7: Serve.

This is something like the usual tomato & tofu soup I make except with added clams. ^_* I’ve never bought frozen clams before coz I’m afraid they might turn out fishy. >_<
Kris, so far I don’t have bad experience on the frozen clams that I’ve bought. You may use fresh clams too if you can get from your fishmonger, and it’s definitely better!
Asari clams? I say lala only. haha
