Yen Can Cook ~ Rose, Lotus Seed & Snow Fungus Soup
What’s the first thing that comes to your mind when mention about dried rose buds? Flower tea, I’m sure, right? What if I tell you dried rose buds can be used to boil soup? Yes, I’m as surprise as you when I stumbled upon this recipe in one of my cook books and it really ignited my interest to try it out.
After trying out the recipe, I found that the dried rose buds didn’t contribute much fragrance to the broth (which is a good thing I guess, hehe :P), and the soup tasted rather mild with pleasant sweet notes from other ingredients. The main function of them in the soup should be the benefits they contain. Dried rose buds contain a high concentration of vitamin C which by far surpasses the levels in fresh fruits like orange, tomato, and grapefruit. It is also able to clear toxic waste from the bladder and kidneys and therefore reduces the risk of urinary tract infections. It contains rich nutrients and organic acids with help to prevent digestive problems and eliminate the toxic waste and substances that can build up in the intestines.
Ingredients (Serve: 3-4)
400g pork ribs/pork soup bones/chicken
10g dried rose buds
35g dried lotus seed
35g dried lily bulbs
15g dried longan
15g snow fungus/white fungus
10-12 red dates, de-seeded
2500ml water
salt to taste

Step 1: Soak snow fungus in water until soft. Rinse and cut into smaller pieces. Set aside.
Step 2: Put the pork ribs/pork soup bones/chicken into a pot of water and bring to boil, to remove blood and impurities. Remove, drain and set aside.
Step 3: Put all the ingredients (except salt) into a pot and add in water until enough to immerse all the ingredients. Bring to boil and lower the heat and let the soup simmer for 2-3 hours.
Step 4: Season with salt and serve.

Tekkaus, I can’t say the soup is refreshing, but I like the natural sweetness that contributed by all the ingredients.
I have seen those dried rose buds sold at specialty tea shops but I never thought that they could be cooked in soup!
PH, I was surprise too when I saw it in the ingredient list and so coincidentally I just bought some dried rose buds, must try lah, right? Hehe π
I used to drink dried rose bud teas because they said would help my complexion. I had no idea that it has so much vitamins inside. That shop seller didn’t tell me and should take lessons from you.
TM, normally dried rose bud tea is for women, but of course men also can drink lah, hehe π
