Yen Can Cook ~ Stir Fried Peanut Sprouts with Waxed Meat
I guess today’s main ingredient is quite new for most of us and I was introduced to it by my sis which she got from her veggie vendor in her neighbourhood. Sharing is caring, so she gave me a packet to try and I’m sharing this recipe to you all. (^^)v
Peanut Sprout – At first glance, they look like soybean sprouts, but with bigger “head”. (≧▽≦) Indeed, other than the appearance, the taste and the texture are very similar with soybean sprouts too, but more nutty. (It’s peanut after all!)
Also called the longevity sprouts in Chinese (长寿芽/万寿芽) due to its nutritional value since ancient times, peanut sprouts are said to be easier to digest than peanuts, leading to faster nutrient absorption. They can be eaten raw in salad or snack it with sambal, cook in soup, steam, or stir fry like today’s recipe. Instead of plain stir fry, I amped up the flavour with my favourite waxed meat. You may use any of your preferred protein such as sliced pork/beef/chicken, or prawns even fresh scallops to replace the waxed meat.
Ingredients (Serve: 3-4)
1 pack peanut sprouts
100g waxed meat
2 cloves garlic, sliced/minced
1/2 tablespoon soy sauce
3 tablespoon water
A dash of white pepper
Salt and sugar to taste

Step 1: Blanch waxed meat with boiling water to get rid of excess oil. Slice the meat and set aside.
Step 2: Heat a wok or large pan, fry the waxed meat (Step 1) until fragrant and lightly brown, about 2 minutes. Dish up and set aside.
Step 3: With the oil released from the waxed meat, add in garlic and saute until fragrant. Add in peanut sprouts, soy sauce, water and pepper, stir and let it shimmer for about 3-4 minutes or until peanut sprouts are tender-crisp. Check on the texture of the peanut part as it is harder, cook longer if you prefer a softer texture.
Step 4: Return the waxed meat (Step 2) to the wok, stir to get all the ingredients well mixed. Season with salt and sugar if necessary.
Step 5: Serve.

Tekkaus, you definitely can , they just like thicker and bigger version of soybean sprouts. ^__^
Your dish has more meat than sprouts…lol. I’d like more sprouts for sure…..is the sprouts expensive? 😉
