Yen Can Cook ~ Steamed Vegetarian Dumplings
Took a break from work (as well as blogging) for a few days last week and did nothing at home, except binge watching both Netflix and Youtube, snacking & (ᴗ˳ᴗ). What a great holiday and I’m back!
Who doesn’t love dumplings? The choices of filling are countless and they can be prepared in so many different ways, from steamed to boiled and fried. From the wide variety of dumplings, pork is the usual main ingredient for dumplings, together with assorted types of vegetable such as chives or cabbage, which make into meat dumpling that commonly available in Chinese or Japanese restaurants (known as Gyoza in Japanese restaurant).
Today’s recipe is steamed vegetarian dumplings consisting filling of stir fried vegetables and fried egg. Of course you can deep fry or boil them if you don’t like the steamed version. You may make extra then freeze them in the fridge too, which is a great saviour when you need a quick weeknight dinner.
Ingredients (20-25 dumplings)
Dumpling wrappers
3 eggs
200g cabbage, shredded
2 potatoes, shredded
1 carrot, shredded
1.5 tablespoons soy sauce
Cooking oil
Salt and pepper to taste

Step 1: Whisk eggs in a bowl and heat oil in a skillet. Cook eggs, scrambled, until light and fluffy. Remove from heat and separate eggs into small pieces. Set aside.
Step 2: Add some oil in the same skillet, add in all shredded vegetables and soy sauce, stir fry till soften and cooked through. Add in scrambled egg (Step 1), stir to combine. Add salt and pepper to taste. Dish up and set aside to cool.
Step 3: Scoop filling mixture into the centre of a dumpling wrapper. Smear along the edges of the dumpling wrapper with water and fold the dumpling wrapper over to create a half-moon shape. Seal the filling inside by pleating the edges or just simply press the edges together like what I did. Repeat until all the mixture and dumpling wrappers are used up.
Step 4: In a pot, bring water to boil . Place dumplings in steamer and steam for 10-15 minutes until tender.

If you didn’t say your dumplings were steamed, I would have thought they were fried…because of the nice browned look! 😉
