Yen Can Cook ~ Chive Flowers & Egg Stir Fry (Vegetarian)
As the name suggests, chive flowers, or also know as chive blossoms or chive buds are flowers of chive, which are light yellowish oval unopened buds in borne on the green stems.
I also found out that there’s another species of chive which produces a small, puffball shape purple-pink flower that looks like a dandelion clock. So pretty right, and they are edible and often added to salads for a splash of colour, or used as a garnish.
Today’s recipe is a quick, delicious and nutritious stir fry dish that combines scrambled egg and chive sections. Also check out another chive flowers dish that I shared some time ago HERE.
Ingredients (Serve: 3-4)
4 eggs
2 bunches chive flowers
2 teaspoons salt
Cooking oil
Soy sauce to taste
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Step 1: Cut the Chinese Flowering Chives into 1-2″ long pieces, discarding the last few inches which are too fibrous to eat.
Step 2: Whisk egg well with a small pinch of salt. Set aside.
Step 3: Heat oil in skillet, pour in the beaten egg, stir and scramble the egg, use spatula to separate the egg into small pieces.
Step 4: Add in chive flowers (Step 1), stir fry until the chive flowers are almost softened. Add soy sauce to taste. Serve.
I like any fragrant greens like spring onions, yin sai, chives….and chive flowers is part of that too. A simple stir-fry with eggs is nice and clean tasting…but never thought of that as I usually do it with prawns.
