Yen Can Cook ~ Stir Fried Garlic Clams
If you can get some fresh clams either from morning market or supermarket, this recipe would be one of the best ways to cook them. With just a few simple ingredients and seasonings, not only the natural sweetness of the shellfish is retained but the flavour also being further elevated.
Ingredients (Serve: 3-4)
500g clams
3 cloves garlic, chopped
1 thumb-sized ginger, julliened/chopped
1 red chili, sliced/chopped
1 tablespoon oyster sauce
120ml Chinese cooking wine
2 stalks spring onions, cut into to 2 inch length
Cooking oil

Step 1: Rinse the clams in running water, and scrub if necessary. Put them into a large bowl with and cover with water. Add in salt generously and leave for a couple of hours, then drain and rinse well to remove any grit or sand.
Step 2: Heat up some cooking oil in a wok, add in garlic, ginger and red chili, stir fry until aromatic.
Step 3: Add in cleaned clams, stir a few times and cover with the wok’s lid.
Step 4: When the clams start to open up, add in oyster sauce and spring onion, toss the clams for about 1 minute until the sauce is well mixed into the clam. Pick out and discard the clams that don’t open. Pour in the cooking wine and stir fry for another 30 seconds.
Step 5: Serve.

That’s how I would cook it too (minus the oyster sauce) if I can get my hands on fresh clams…but usually can’t (yours look really fresh & plump). >.< P/S: I think you forgot to mention when to put in the wine (and spring onions) in your recipe….hehe! 😉

KY, I prefer spicy version too but Sam can’t eat spicy food.
